Today I finally had the right ingredients and enough energy to make Macaroni and Cheese. After my last my post I started looking for a recipe like my grandmother's. I knew the basic ingredients she used: milk, cheese, noodles, and an egg. So I passed over any recipe that didn't use an egg.
After finding quite a few I settled on The Pioneer Women Cooks recipe. Macaroni and Cheese
I followed the recipe exactly and it looked like my grandmas...
I even used the same baking dish. However, it did not taste like Grandma's. I had baked it for 20 minutes and it just wasn't right so back in the oven it went for another 20. This time it was more crunchy but still not perfect. It was too cheesy and the noodles near the edges weren't crunchy and brown. The egg did blend well but next time I'll use way less cheese. I know my grandma used Tillamook, which is the best cheese ever, so that wasn't the problem.
So now the hunt begins for another recipe to try. Anyone have any suggestions?
PS: If you have a favorite recipe write it down so you can share it with the next generation
Such a good idea. Remember my Aunt Charlotte's sugar cookie recipe that I didn't write down so lost for 20 years. Thankfully, my best friend from first grade wrote it down--so I have it once again.

Mom used Velveeta a lot when I was a kid. I can't remember, but there's probably a good chance she used it for the macaroni and cheese. I see Kraft is still selling it, maybe they have a macaroni recipe using velveeta. If it's still around, you might also look through the old Betty Crocker cookbook that was a constant when I was a kid. However, I have a hunch that the velveeta might be the real key.
ReplyDeleteSorry I can't be more help. That dish was old hat since we had it pretty often, so it didn't occur to me that I'd ever have a niece who would craved it.
Aunt LeeAnn
This is my favorite Mac & Cheese recipe.

I haven't ever put ham in it...but I'm sure its good. Also, I am so against Kraft Singles. This is my only moment of weakness ;)
Lastly, can you eat barley? Im assuming that is a safe gluten free item? Well, I made this Hearty Bean & Barley soup night before last (my first night of cooking while in CA) and it turned out good. Eric even ate left overs which is unheard of. I thought of you when I made it...since it didn't have any flour.
